Ultimate lamb shanks - TastyPlanner.com

The best roasted lamb shanks. Falls off the bone: juicy on the inside but slightly crispy outside.
Ingredients
2 lamb shanks
4 Cloves of Garlic
1 pint good chicken stock
1 tablespoon flour
1 tablespoon chopped capers
2 tablespoons chopped mint
1 tablespoon red wine vinegar
Instructions
1. Pre-heat the oven to 160c.
2. Place the lamb shanks in a ovenproof casserole dish with a lid. Cover with the chicken stock. Lightly crush the garlic with the back of your spoon and add to the pot. Season.
3. Cook in the oven for about 2 hours. Turn the shanks after an hour and remove the lid slightly to allow the stock to begin to reduce.
4. Transfer the garlic and the shanks to a roasting tin and spoon over a couple of ladels of the stock. Keep the rest of the stock to make the gravy.
5. Return the lamb to the oven for about 45 mins.
6. Remove the meat and allow to rest while you make the gravy.
Gravy:
1. Take the garlic and most of the fat out of the roasting tin.
2. Place on a medium-high hob and add the saved stock. Add a little extra water if there isn’t much stock left.
3. Add the flour and bring to the boil to thicken.
4. Add the chopped mint and capers and then remove from the heat.
5. Add a splash of red wine vinegar.
