Unstuffed Cabbage - TastyPlanner.com

I grew up eating golumpkis on holidays. I adapted this easy, flavorful, and light recipe from my grandmother’s original golumpki formula.

Ingredients
5 cups shredded cabbage
1 (12 ounce) package vegetarian burger crumbles (or hamburger)
1 tbs. olive oil
1 red onion, diced
1 (14.5 ounce) can Italian-style stewed tomatoes
1/2 tablespoon lemon juice
1 tablespoon brown sugar
1/2 c. chopped fresh dill
1/2 teaspoon ground allspice (or your own spice combination)
freshly ground black pepper to taste
2 c. cooked brown rice
Instructions
Heat large skillet over medium-high heat. Add onions to the olive oil and saute for 5 minutes.
Stir vegetarian burger crumbles, tomatoes, lemon juice, brown sugar, dill, allspice, rice and pepper into the mixture. Bring the mixture to a boil, cover and reduce the heat to low.
Stir in cabbage and let it cook 15 minutes; or until wilted and
lightly browned. Enjoy!

I really liked this recipe. I actually couldn’t find cabbage in the only grocery store within two hours (that’s what you get for living in the middle of nowhere) but they had coleslaw mix- so I used that. I also didn’t add the rice and put the whole thing over couscous. It was really nice! My husband thought it wasn’t spicy enough- but he usually thinks that about everything. Thanks for the recipe!
