3 tablespoons olive oil
1/2 cup Yellow Onion, diced
1 cup mushrooms, thinly sliced
1 clove garlic, minced
1/2 cup Green Pepper, diced
2 teaspoons Soy sauce or tamari
8 ounces soy ground rounds or tempeh
1 cup ketchup
1 tablespoon mustard
1 tablespoon apple cider vinegar
1/4 teaspoon ground cloves, optional
1/4 teaspoon cayenne powder, optional
4 hamburger buns
1. Add the olive oil to a large skillet over medium heat. Add the onion and mushrooms and saute for 3 minutes. Add the garlic, bell pepper, and 1 teaspoon of soy sause. Saute for 8 more minutes
2. Add the tempeh or ground soy to the onion mixture, stir well and drizzle with remaining soy sause. Cook for another 8 minutes, or until the tempeh begins to brown.
3. In a small mixing bowl, whisk together the ketchup, mustard, vinegar, cloves and cayenne powder. Pour over the tempeh mixture and stire well to combine.
4. Reduce heat to low and cook uncovered for another 5 minutes. Spoon the mixture onto the buns or over the toasted bread. Garnish with pickle slices
