Vegan Sloppy Joes

1 (16-ounce) block of firm tofu, pressed, drained
2 tablespoons olive oil
1 small onion, finely chopped
1/2 red bell pepper, finely chopped
2 garlic cloves, minced
1/2 cups tomato puree
2 tablespoons tomato paste
2 tablespoons molasses
1 teaspoon ground coriander
pinch of cayenne
2 tablespoons minced fresh parsley
8 whole grain buns, split, toasted
Crumble tofu into a medium bowl and set aside.
In a large skillet over medium heat, heat oil and cook onion and bell pepper, stirring often, for 4 to 5 minutes or until vegetables are soft.
Add garlic and cook, stirring, for 1 minute. Stir in tofu and cook, stirring occasionally, for 3 minutes.
Stir in tomato puree, tomato paste, molasses, coriander, cayenne, and parsley. Bring to a simmer and cook, stirring occasionally, for 10 minutes.
Fill buns with tofu mixture and serve.
