Vegetable Cheese Soup - TastyPlanner.com

This soup is great for dinner or lunch. Make extra and throw it in the freeze. Put it in a crock pot and bring to a pot luck. Everyone will love it!
Ingredients
10 oz. fresh or frozen broccoli
10 oz. fresh or frozen cauliflower
2 lbs. potatoes, peeled and cubed
1 C. onion, chopped
1 1/2 C. carrots, chopped
6 chicken boullion cubes
7 C. water
2 C. milk
2 cans cream of chicken soup
1 lb. Velveeta Cheese, cubed
left over ham or bacon
Instructions
Put broccoli, cauliflower, potatoes, onion, carrots, bouillon cubes in a large pot. Add enough water to cover everything in the pot. Bring to a boil and simmer for 30 minutes. Use a potato masher to mash vegetables in to small chunks, or leave the big pieces. Add milk, cream of chicken soup, velveeta cheese, and ham/bacon. Serve when heated throughly.
