Vegetable Israeli Couscous with Feta - TastyPlanner.com

Yummy side dish!
Ingredients
1 1/4 cups vegetable broth
2/3 cup Israeli Couscous
4 tsp olive oil
1 large eggplant
2 Bell Peppers, mixed colors chopped
1/2 cup onion, chopped
3 Carrots, sliced into 1 inch sticks
1/3 cup Almonds, sliced
1/2 tsp oregano
1/2 tsp salt
2 tomatoes, diced ; or 1 can Diced Tomatoes
1/2 cup feta cheese, crumbled
Instructions
Preheat oven to 350 degrees
Bring broth to a boil then place in couscous. Cook until couscous is al dente. Remove from heat and cover.
Heat 2 tbsp olive oil in a large then add onions. Cook till onions become translucent. Add eggplant and cook till it starts to becomes crispy. Set aside.
In another pan heat 2 tbsp olive oil in a pan then add carrots, almonds and bell peppers. Cook, stirring frequently, for 5 minutes or until vegetables are softened. Stir in the tomatoes, oregano and salt. Cook for about 5 minutes. Remove from heat.
Add couscous, carrots, almonds and bell peppers to the eggplant skillet and mix together. Spoon into a baking dish then top with crumbled feta cheese. Bake 15 minutes. Serve immediately.
