Vegetable moussaka
Ingredients
1 lb tatties
1 large aubergine
2 medium courgettes
6 tbsp olive oil
2 medium red onions, thickly sliced
2 cloves garlic, crushed
400 g can chopped tomatoes
2 tbsp tomato puree
1/2 tsp dried oregano
5 oz feta cheese
1 large egg, beaten
150 ml Greek style yoghurt
Salad for serving
Instructions
Pre-heat oven to 220 degrees C
Thinly slice tatties, put into a pan with boiling water and cook for 5 minutes
Slice the aubergine and courgettes 1/4 inch thick
Place on a large roasting tray
Drain the tatties, add to the tray and pour over 4 tbsp olive oil
Toss together, season
Place in oven and roast for 15 minutes
Add the sliced onions, turn the vegetables over, and cook for further 10 minutes
While veg are roasting, heat the remaining oil in a medium frying pan
Add the garlic and cook for about 30 seconds
Stir in the tomatoes, tomato puree, sugar and oregano
Boil for 5 minutes, stirring until thick
Remove from heat and season
Take roast veg from oven and reduce temperature to 190 degrees C
Transfer half the veg to a 3 pint ovenproof dish
Spoon over half the tomato sauce, crumble over the feta cheese
Add the rest of the veg and the tomato sauce
Mix the egg with the yoghurt and Parmesan cheese
Spoon over the top and bake for 30-35 minutes until top is golden
Stand for 4-5 minutes before serving with green salad
