Ingredients
5 cups veggie or chx broth
1 cup aborio rice
1/2 cup water
1 onion, finely chopped
2 cups broccoli florets
1 cup finely chopped zucchini
1 cup frozed corn kernels, thawed
1 cup finely chopped red bell pepper
1 cup finely chopped green bell pepper
1/4 cup finely chopped fesh basil

Instructions
Place the broth in a saucepan and bring to a boil. Stir in the rice, reduce heat, and cook over low heat, stirring frequently, until the broth is absorbed about 15 minutes.
Water in large nonstick frying pan. All all the vegetables, except the basil. Cook, stirring occasionally, for 10 minutes. Romove from heat..
Combine the rice and vegetables. Stir in the basil. Season w/ pepper.
