A simple crockpot vegetarian chili. This can be cooked in 30 minutes, but is best left in the crockpot on low for 6-8 hours.
Ingredients
1 onion, diced
1 garlic clove, diced
2 cans chili beans, drained
2 cans black beans, drained and rinsed
1 can kidney beans, drained and rinsed
1 cup frozen corn
1 can (14oz) stewed tomatoes
1 can (6oz) tomato paste
3 Tbsp chili powder
1 1/2 tsp Cumin
2 Tbsp chipotle peppers in adobo sauce
1 tsp cinnamon
salt and pepper, to taste
Hot Sauce, to taste
sour cream, for serving
chips, for serving
shredded cheese, for serving
Instructions
Saute onion and garlic until soft (unless cooking all day, then can add raw). Add other ingredients and simmer 20 minutes or all day in crockpot.
