Vegetarian Tater Tot Casserole - TastyPlanner.com

This is a vegetarian version of a grand old classic. Pinto beans are my ground beef substitute of choice.
Ingredients
1 Can Cream of Mushroom Soup
1 bag Tater Tots
1 can water
1 can pinto beans
1 carrot
1 1/2 c frozen peas
1 1/2 c frozen corn
1/2 t onion powder
1/2 t garlic powder
Instructions
Stir together cream of mushroom soup and water in 13×9 pan. Add approximately 1/4-1/3 of the tater tots, the can of pintos, and the frozen veggies. Chop up the carrot and add that too. Add the garlic and onion powder. (I just shake it in liberally. I have no clue how much I actually put in.)
Neatly arrange the remaining tater tots in rows and columns on the surface of the mixture. Bake in 375 oven for about 45-50 minutes. You should have crispy tater tots on top without them being burnt, and the mixture beneath should be happily bubbling.
