Veggie Ma Po Tofu - TastyPlanner.com

My take on a famous spicy Sichuan dish, minus the ground pork. For a heartier texture, substitute spinach with green peppers, just add them at the same time as the green onion. Fantastic over rice.
Ingredients
1 1/2 tbsp canola oil
1 package firm tofu, cubed
1 inch ginger minced
3 cloves garlic minced
1 1/2 tbsp sesame oil
1 small bunch green onions, sliced diagonally one inch thick
2 cups baby spinach
2 tsp garlic chilli sauce
1 tbsp soy sauce
1/2 tsp veggie bouillon
1 tsp corn starch
1/2 cup cold water
Instructions
Saute cubed tofu in canola oil to heat through and give a bit of colour to the surface. Add garlic and ginger, stirring carefully till fragrant. Top with sesame oil.
Combine garlic chilli sauce, soy sauce, veggie bouillon, corn starch and water in a cup and set aside.
Add the green onions and let them get bright green. Pour the garlic chilli combo sauce on top, finally mix in the spinach. Ready as soon as the greens are wilted but still bright.
