yummy quick version of veggie sushi. great for a light quick dinner at home.
Ingredients
1 package nori
1 avocado
1 JalapeƱo
1 bell pepper
1/2 package tofu
1 carrot
1 cucumber
5 servings cooked sushi rice
1 bottle soy sauce
Instructions
cook rice
chop ingredients
roll rolls

Honestly, I don’t know why you would add one kind of pepper let alone two to a sushi roll, but it’s your call. I personally use avocado, cream cheese, cucumber, and yam (sometimes I tempura the yam, depending on how lazy I’m feeling) and sometimes bean sprouts, then roll it up with sesame seeds on top and wasabi paste and sweet teriyaki for dipping. But either way, it would be helpful if you explained how to make sushi rice, because it requires rice vinegar and sugar and salt to do properly. FYI, to anyone buying the ingredients for sushi — you’ll need those things to make the rice properly, and sushi rice needs to be cooled completely after cooking as well, so it’s best to cook it the night before or in the morning. :)
