This filling can be used in my recipe for oatmeal gingersnaps (http://tastyplanner.com/recipes/2522-oatmeal-gingersnaps) to create a homemade version of Little Debbie Oatmeal Cream Pies. Try wrapping the cookie sandwiches in plastic wrap and freezing them for a cool treat in the summer.
Ingredients
2 egg whites
4 tsp vanilla
1/2 C flour
1/4 c milk
1 c shortening
4 c powdered/icing sugar
Instructions
Beat egg whites until stiff and set aside. Mix together vanilla, flour, and milk. Beat in shortening and sugar. Add egg whites. Spread between two cookies.
