Basic whole wheat bread recipe. To make a milder loaf, replace 3 cups whole wheat flour with 3 1/2 cups white flour.

Ingredients
1 tsp white sugar
2 packages dry yeast
1/2 cup warm water (90 - 100 F)
2 cups hot water
1/3 cup brown sugar
2 tsp salt
3 tbsp shortening
7 cups whole wheat flour
Instructions
Prepare yeast and white sugar in warm water.
Dissolve brown sugar, shortening, and salt in hot water and cool. Stir in 2 cups flour and then add the yeast solution. Continue adding flour until dough is stiff.
Knead dough on lightly floured board for about ten minutes, round and place in greased bowl; cover and let rise in a warm place until double in bulk (about 1 – 1.5 hours). Punch down, cover and let rise again until double in size (about 1 hour). Divide into two pieces and shape into loaves. Cover and let rise until double in bulk (approximately 1 1/2 hours). Bake at 375F for 40 to 50 minutes.
