This is much like sweet and sour.

Ingredients
2 whole chicken breasts
2 chicken thighs or legs
2 green peppers, sliced
1/2 C flour
1 tsp salt
1/3 c oil
Rice
Glaze:
1 lb pineapple chunks, save juice
1 c sugar
2 tsp ARROWROOT
3/4 c cider vinegar
1 TBS wheat-free soy sauce
1/4 tsp ginger powder
1 chicken bouillion cube
Instructions
Preheat oven to 350. Heat oil in skillet; dredge chicken, brown in hot oil. Place in baking dish.
Glaze:
Saving the juice, drain the pineapple. Add enough water to reserved juice to make 1 1/4 c liquid.
In a med. saucepan combine juice and remaining ingredients except pineapple and pepper. Bring to a boil, stirring constantly, boil 2 minutes. Pour over chicken. Bake at 350, 30 minutes. (Start cooking rice about now.) Add pineapple and sliced pepper. Bake 10-15 mins more.
Serve over rice.
