Ingredients
3 cups reduced-sodium chicken broth
1 cup wild rice, rinsed
1 bunch scallions, chopped
1/2 cup dried cranberries
1/4 cup fresh parsley leaves, chopped
1/4 cup coarsely chopped pecans
Instructions
1. Bring the broth to a boil in a medium saucepan; stir in the rice. Reduce the heat and simmer, covered, 20 minutes.
2. Stir in the scallions and cranberries; simmer, covered, until the grains start to pop and the rice is tender, 35-40 minutes. Fluff the rice with a fork; stir in the parsley and pecans.
