Wilted Spinach with Garlic - TastyPlanner.com
Great alongside any pork or chicken entree
Recipe Source: My own creation
8 oz of baby spinach
2 cloves of garlic, pressed
2 pinches of crushed red pepper
2 T of olive oil
1 T of lemon juice
coarse sea salt
Heat non-stick pan over medium heat. Add 1 tablespoon of olive oil to the pan. Do not allow the oil to brown or smoke.
Press 2 cloves of garlic. Add to hot pan, along with crushed red pepper. Cook garlic just until aromatic, about 1 minute. Add spinach all at once – it will wilt down as it cooks. Sprinkle with sea salt and lemon juice. Add the last tablespoon of olive oil and then remove from the heat.
Season with more salt if needed.
